Natural homemade preserves are created from fresh local ingredients, many harvested from their garden. Using traditional recipes and open muslin pans Nigel and Penny produce small batches of artisan jams, chutneys, hedgerow jellies and mustards. The couple also produce a small amount of natural honey each year from their bees which are left to buzz free around the glorious Yorkshire countryside. Carol and Jim Webb, both amazingly talented pastry chefs, set up Forge Lane Brownies after returning to the North East from a long stint in London. They began developing a range of cake recipes from home but soon realised that their brownies were the way forward. As well as making the brownies, they are also developing ways of producing some of the ingredients for them, including using the eggs from their flock of hens and the fruit harvested from trees and bushes they've planted.
